- 12 oz (350g) spaghetti
- Salt (for boiling water)

Instructions
Making the Bolognese Sauce:
- Heat olive oil in a large skillet over medium heat.
- Sauté the onion, garlic, carrot, and celery until softened, about 5 minutes.
- Add the ground meat and cook until browned, breaking it up with a spoon.
- Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.
- Pour in the red wine (if using) and let it simmer for 3-4 minutes.

Cooking the Spaghetti:

- Cook the spaghetti until al dente according to the package instructions. Reserve ½ cup of pasta water before draining.
Combining the Pasta and Sauce:
- Remove the bay leaf from the Bolognese sauce.
- Toss the cooked spaghetti with the sauce, adding a splash of reserved pasta water if needed to loosen the sauce.
