Ingredients

For the Lobster:

  • 2 small lobsters (1-1.5 lbs each) (cooked, meat removed, shells reserved for stock)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1 pinch of red chili flakes (optional)
  • ½ cup dry white wine

For the Sauce:

  • 2 tablespoons olive oil
  • 1 medium onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 cup canned crushed tomatoes
  • 1 teaspoon dried basil
  • Salt and black pepper (to taste)

For the Pasta:

  • 12 oz (350g) spaghetti
  • Salt (for boiling water)
  • Fresh parsley (chopped, for garnish)

Instructions

Preparing the Lobster Stock (Optional):

  1. In a pot, sauté the reserved lobster shells with a splash of olive oil.
  2. Add 2 cups of water, simmer for 15-20 minutes, then strain to create a flavorful stock.

Making the Sauce:

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté the onion and garlic until softened, about 3-4 minutes.
  3. Add the crushed tomatoes, dried basil, and a splash of the lobster stock or white wine. Let it simmer for 15 minutes.

Cooking the Lobster Meat:

  1. In a separate pan, heat olive oil and sauté garlic and chili flakes.
  2. Add the lobster meat and cook for 2-3 minutes. Deglaze the pan with white wine, then add the mixture to the tomato sauce.

Cooking the Pasta:

  1. Cook the spaghetti in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.

Combining the Dish:

  1. Toss the spaghetti in the lobster-tomato sauce, adding reserved pasta water as needed for a silky texture.
  2. Gently mix in the lobster meat.

Serving:

  • Plate the lobster spaghetti and garnish with fresh parsley.
  • Serve with crusty bread and a glass of white wine for a luxurious dining experience.
