Ingredients
For the Lobster:
- 2 small lobsters (1-1.5 lbs each) (cooked, meat removed, shells reserved for stock)
- 2 tablespoons olive oil
- 2 garlic cloves (minced)
- 1 pinch of red chili flakes (optional)
- ½ cup dry white wine
For the Sauce:
- 2 tablespoons olive oil
- 1 medium onion (finely chopped)
- 2 garlic cloves (minced)
- 1 cup canned crushed tomatoes
- 1 teaspoon dried basil
- Salt and black pepper (to taste)
For the Pasta:
- 12 oz (350g) spaghetti
- Salt (for boiling water)
- Fresh parsley (chopped, for garnish)
Instructions
Preparing the Lobster Stock (Optional):
- In a pot, sauté the reserved lobster shells with a splash of olive oil.
- Add 2 cups of water, simmer for 15-20 minutes, then strain to create a flavorful stock.
Making the Sauce:
- Heat olive oil in a skillet over medium heat.
- Sauté the onion and garlic until softened, about 3-4 minutes.
- Add the crushed tomatoes, dried basil, and a splash of the lobster stock or white wine. Let it simmer for 15 minutes.
Cooking the Lobster Meat:
- In a separate pan, heat olive oil and sauté garlic and chili flakes.

- Cook the spaghetti in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
