Ingredients
- 1 lb (500g) cooked octopus (cut into bite-sized pieces)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- 1 small red onion (thinly sliced)
- 1 red bell pepper (diced)
- 2 tablespoons fresh parsley (chopped)
- 1 tablespoon capers (optional)
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove (minced)
- 1 teaspoon Dijon mustard
- Salt and black pepper (to taste)
Instructions
Preparing the Octopus:
- If using fresh octopus, clean and boil until tender (about 45 minutes). Let it cool, then cut into bite-sized pieces. If using pre-cooked octopus, simply rinse and cut.
Preparing the Dressing:
