Ingredients

  • 1 lb (500g) cooked octopus (cut into bite-sized pieces)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 small red onion (thinly sliced)
  • 1 red bell pepper (diced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon capers (optional)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove (minced)
  • 1 teaspoon Dijon mustard
  • Salt and black pepper (to taste)

Instructions

Preparing the Octopus:

  1. If using fresh octopus, clean and boil until tender (about 45 minutes). Let it cool, then cut into bite-sized pieces. If using pre-cooked octopus, simply rinse and cut.

Preparing the Dressing:

  1. In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, salt, and black pepper. Adjust seasoning to taste.

Assembling the Salad:

  1. In a large bowl, combine the cooked octopus, cherry tomatoes, cucumber, red onion, red bell pepper, and capers (if using).
