  • 1 medium onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 large tomato (diced)
  • 4 cups fish or seafood stock
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon saffron threads (optional, for color)
  • Salt and black pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

Preparing the Base:

  1. Heat olive oil in a large pan over medium heat.
  2. Sauté the onion and garlic until fragrant and translucent.
  3. Add the diced tomato and paprika, stirring for 2-3 minutes until softened.

Cooking the Seafood:

  1. Add the shrimp, mussels, and squid to the pan. Cook for 5-7 minutes until the seafood starts to release its juices.
