Baked Salmon with Lentils

Ingredients

For the Salmon:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1 garlic clove (minced)
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper (to taste)

For the Lentils:

  • 1 cup green or brown lentils (rinsed and drained)
  • 1 medium onion (finely chopped)
  • 1 carrot (diced)
  • 1 celery stalk (diced)
  • 2 garlic cloves (minced)
  • 4 cups vegetable or chicken stock
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • Salt and black pepper (to taste)

Instructions

Preparing the Salmon:

  1. Preheat the oven to 200°C (180°C fan-assisted).
  2. Rub the salmon fillets with olive oil, garlic, paprika, dried thyme, salt, and black pepper.
  3. Place the salmon on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and slightly crispy on top.

Cooking the Lentils:

  1. Heat olive oil in a large pan over medium heat.
  2. Sauté the onion, carrot, celery, and garlic until softened (about 5 minutes).
  3. Add the rinsed lentils and cumin to the pan, stirring for 1-2 minutes.
  4. Pour in the vegetable or chicken stock and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and have absorbed most of the liquid. Season with salt and black pepper to taste.

Serving:

  1. Plate the cooked lentils as a base and place the baked salmon fillet on top.
  2. Garnish with fresh herbs like parsley or dill, and serve immediately for a healthy, hearty meal.
