Ingredients
For the Salmon:
- 4 salmon fillets
- 2 tablespoons olive oil
- 1 garlic clove (minced)
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and black pepper (to taste)
For the Lentils:
- 1 cup green or brown lentils (rinsed and drained)
- 1 medium onion (finely chopped)
- 1 carrot (diced)
- 1 celery stalk (diced)
- 2 garlic cloves (minced)
- 4 cups vegetable or chicken stock
- 1 teaspoon cumin
- 1 tablespoon olive oil
- Salt and black pepper (to taste)
Instructions
Preparing the Salmon:
- Preheat the oven to 200°C (180°C fan-assisted).
- Rub the salmon fillets with olive oil, garlic, paprika, dried thyme, salt, and black pepper.
- Place the salmon on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and slightly crispy on top.
Cooking the Lentils:
- Heat olive oil in a large pan over medium heat.
- Sauté the onion, carrot, celery, and garlic until softened (about 5 minutes).
- Add the rinsed lentils and cumin to the pan, stirring for 1-2 minutes.
- Pour in the vegetable or chicken stock and bring to a boil.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and have absorbed most of the liquid. Season with salt and black pepper to taste.
Serving:
- Plate the cooked lentils as a base and place the baked salmon fillet on top.
- Garnish with fresh herbs like parsley or dill, and serve immediately for a healthy, hearty meal.
