- 2 lbs (1 kg) fresh mussels (cleaned and debearded)
- 2 tablespoons olive oil
- 4 garlic cloves (minced)
- 1 medium onion (finely chopped)
- 1 cup dry white wine
- ½ cup chicken or vegetable stock
- 1 tablespoon fresh parsley (chopped)
- 1 teaspoon fresh thyme (optional)
- Salt and black pepper (to taste)

Instructions
Preparing the Mussels:
- Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are cracked or do not close when tapped.
Cooking the Broth:
- Heat olive oil in a large pot over medium heat.
- Add the garlic and onion, sautéing until softened and fragrant (about 3-4 minutes).

Steaming the Mussels:
