Crispy Delight of Bakaliaros (Greek Fried Cod)
Bakaliaros, or Greek fried cod, is a beloved dish often enjoyed on special occasions. Featuring tender cod coated in a crispy golden batter and paired with a tangy garlic sauce, this recipe captures the essence of Greek culinary tradition in every bite
Ingredients
For the Cod:
- 1 lb (500g) cod fillets (fresh or salted, desalted if needed)
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 teaspoon baking powder
- 1 cup sparkling water (cold)
- Salt and black pepper (to taste)
- Vegetable oil (for frying)
For the Garlic Sauce (Skordalia):
- 3 medium potatoes (boiled and peeled)
- 3 garlic cloves (minced)
- ⅓ cup olive oil
- 2 tablespoons white vinegar
- Salt (to taste)
Instructions
Preparing the Cod:
- If using salted cod, soak it in water for 24 hours, changing the water regularly. If using fresh cod, rinse and pat it dry.
- Season the cod fillets with salt and black pepper.
Making the Batter:
- In a bowl, mix flour, cornstarch, and baking powder.
- Gradually whisk in the cold sparkling water until a smooth, thick batter forms.
Frying the Cod:
- Heat vegetable oil in a deep pan to 350°F (175°C).
- Dip each cod fillet into the batter, ensuring it is fully coated.
- Fry the fillets in small batches for 3-4 minutes, or until golden and crispy.
- Remove and drain on paper towels.
Preparing the Garlic Sauce (Skordalia):
- Mash the boiled potatoes in a bowl until smooth.
- Mix in the minced garlic, olive oil, white vinegar, and salt to taste. Stir until creamy and well combined.
Serving:
- Serve the crispy fried cod with a generous dollop of garlic sauce on the side.
